In case you didn’t know we’re totally into cooking food that converts into clean fuel for the human surfer’s body. Why? Because what you put in is what you get out. Hugh Jackman reckons his Wolverine diet was way more important than the workouts, but they seem to flit over that in the glossies.
So picture this. A surf trip up the coast in winter. You head off before dawn and find yourself on a lonely highway. You could pull over at the Caltex monstrosity and buy yourself some high GI sugar snacks. Or you could unwrap one of these babies and enjoy a low GI, nutritious cookie. If you seriously hate baking (it doesn’t get easier than this) then find yourself a new girlfriend / boyfriend who does.
You’ll have more panache in your paddle, finesse behind your fins and heart in your hack. Mmm.

Ingredients
3/4 cup oats
1/2 cup coconut oil
1 cup wholemeal flour
4 tablespoons almond milk
2/3 cup coconut sugar
2 tablespoons honey
2 tablespoons sesame seeds
1/2 cup dried cherries (or use instead raisins or cranberries)
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Directions
Preheat the oven to 180ºC.
Mix oil with honey. You can heat the honey if you need it to become more liquid. Add flour, vanilla extract and mix well. Add oats, cherries, sugar, cinnamon, sesame seeds and mix thoroughly. Now add milk and mix.
Cook 18-20 minutes in oven until brown. Go surfing. Do not sit at home and eat all the cookies.
